Veggie Pot Pie

There’s really nothing better then some comfort food when it’s snowy and chilly outside .  James had said a while back that he wanted to make a pot pie and tonight seemed like the perfect time to make it!

My sister and I actually made this recipe for Thanksgiving, as a vegan option. It was de-veganized tonight, though and we used some different veggies.

Changes made:buttermilk

  • Canola oil based butter used instead of Earth Balance
  • Cultured buttermilk used instead of soy milk (and we had no regular milk)
  • Veggies used: Broccoli, carrots, celery, onion, corn
  • Whole Wheat Flour used

We made this in the best pan ever because it can go from stove top to oven which equals less clean up which is always a good thing:

I ended up giving about half of my crust to James. I was in it for the filling. I really cannot even express how delicious and satisfying this is. It has a rich and buttery taste (I guess from the cultured buttermilk?), with the corn and peas giving it some sweetness.

James quickly informed me that the leftovers  would be gone by the time I get home from work tomorrow. Good to know.

Now we’re watching The Hitchhiker’s Guide to the Galaxy. Okay James is watching it…I glance up occasionally.

I did a workout on the elliptical before going to work today. I can’t decide whether I want to try to run tomorrow or give my knee another day of rest.  It felt better today but still hurt occasionally, especially going up and down stairs. I’m inclined to want to just ellipticize one more day. I would much rather skip running one more day then risk being out for the count for weeks and not be able to run my half marathon in March!! We’ll see what happens…

How cautious are you when you feel pain? Does it significantly alter your workout or do you “run through the pain” ?
