And the weekend forecast is….
Rain / Thunder
Obviously my first panicked thought when I saw this was…when am I going to do my long run?! I looked at the hourly forecast and I had a choice of running in light rain, rain, heavy rain and a thunderstorm. All lovely options.
I decided to suck it up and run this morning since that was during the supposed light rain and it was relatively warm (55*) . So I put on all the wicky running clothes I could get my hands on + a baseball cap to keep the rain out of my face and a vest to keep my core warm.

Okay I don’t want to be a Debbie Downer..but my run sucked. Honestly, I don’t really mind running in the rain. And plus this was only an 8 mile long run (mid-training taper) so I wasn’t too concerned. But then my knee started giving me problems the second I left. It had bothered me some during my speedwork yesterday but I’ve never had knee issues so I figured I’d be fine. I ended up having to walk a mile in the middle of my run which was really discouraging and I was in a lot of pain.
Then, after I had started running again – and mind you it’s been raining this whole time—a car drives by and splashes a huge puddle all over Toby and I…not a little splash – I’m talking Disney World splash mountain here. If I wasn’t soaked before, I was after that. I just stood there for a second with my mouth open, shocked at what had just happened. It’s one of those things you just have to laugh about because it’s so ridiculous it actually happened!!
So now I’m home, showered and dried off and doing some RICE (rest, ice, compression, elevation) and hoping and praying my knee heals itself. I think I might buy some new running shoes as well – I’ve had mine since July.
James was making a hot dog (turkey) for himself and it just sounded too good to pass up. He got these snuggle buns that he’s been raving about:
And when I said I wanted to have mine on a piece of ezekiel instead he told me I was being a snob. So I said fine let me see the snuggle nutritionals. He looked at the back of the package and said “They’re made of bread”
“Well how many calories are in them?”
“Yea I was shocked too.”
I stuck with the Ezekiel.
Here’s James’ review of the Snuggles:
“These buns are designed well. They don’t tear along a crease and you can pile a lot of toppings without having them fall overboard. They could easily accommodate a sausage or hot dog and I wish they came in whole wheat. I recommend toasting them and keeping the in the freezer for optimal freshness. They taste good…but whole wheat would be better”
There you have it folks! It’s still raining outside and I’m still icing my knee.
haha! It looks so disproportionately large! I just tucked a bag of ice wrapped in a kitchen towel under my dance pants.

I think I’m going to do some Yoga in a bit. Maybe it’ll help my knee. Other then that I think I’m going to take it easy today (the R in RICE!) and re-read The Great Gatsby.

Sometimes I like to make a big batch of something that James can take with him to work for lunch or just eat whenever he’s hungry.
The other night I decided to make him some baked pasta. I thought it would be something he could eat throughout the week.
That was my fault.
I failed to remember that James can eat. A lot.
It was gone in about a day.
At least I know he likes it! And it was ridiculously easy to make.
I used some wheat pasta I got from TJ’s and boiled it until tender. Then I spread it out in a baking dish with some defrosted frozen broccoli and peas as well as some fresh mushrooms chopped up. Then I poured some marinara sauce over it all and mixed it up.
I sprinkled some part skim pizza blend shredded cheese on top (maybe 3/4 of a c.) and popped it into a 350* oven for 25 minutes.
and voila! You have a happy guy clamoring to eat up some pasta.
I’m sure I will be making this many, many more times. (Like our new bowls?? James’ mom gave of an old set of Blue Willow China she no longer uses! I love it!)
When I came home from work today, I did about 30 minutes of Yoga. It felt so wonderful! I really need to start doing Yoga more often. I’d love to do it 3-4 times a week.
Does anyone else with dogs have problems exercising/yoga-ing with them around?? Whenever i get down on the floor to do a move, Toby promptly takes that as a sign that’ it’s time to play.

This mostly happens at the beginning when I’m in child’s pose and he comes over and starts head butting me! haha
It’s supposed to rain ALL WEEKEND! On Saturday it says “heavy rain” !! And I can tell you right now there’s no way I’m doing a long run on the treadmill… Let’s hope it all works out.
I got a comment from In My Tummy the other day about which training plan I was doing for my half. Well I kind of fell off the training plan wagon. I got sick one weekend and didn’t run then I just kept revising. Basically, I’m doing one day a week of speedwork, one day of crosstraining, one rest day, 3 days of 3.8-4.2 mile runs and 1 long run.
So a typical week looks like this:
|XT||Rest||3.8 mi||3.8 mi||4.2 mi||speedwork||10 mi|
XT is usually some time on the elliptical.
For my long runs, my weeks ended up going like this:
|8 miles||sick||~ 9.5 miles||10 miles||8 miles||11 miles||12 miles||6 miles||RACE!|
So that’s my plan! Wow this was a longer post then I thought it would be!!

Tonight’s dinner was inspired by some sundried tomatoes and kalamata olives James’ mom was nice enough to give to us. A couple weeks ago, I bought some frozen Tilapia from Trader Joe’s. So I decided to make a Mediterranean Tilapia.
First I defrosted the fish by putting it in the fridge before I left for work. Once it was defrosted, I put the fillets on a sheet of tin foil, spread about a teaspoon of olive oil over the fillets and squeezed some lemons on top. Then I cut up the lemon and placed it over the fish.
I preheated the oven to 375* and folded the tinfoil over to make a little tent for the fish while it cooked. I cooked it for about 20 minutes and then put a mixture of kalamata olives, chopped sundried tomatoes and capers on top for the last 5-10 minutes.
Putting the mixture in for the last few minutes warmed it up and got some of the flavors in the fish.
I had one of the fillets with a side of steamed broccoli:
It was such a great, refreshing meal. Nothing heavy here! I love Mediterranean food!!
The end of this week is warming up! Tomorrow the high is 67*! Wahoo! I hope it’s warm for my run tomorrow morning (warm = above 30 degrees).
Okay back to the movie. It’s good..but disturbing! Oh my gosh. I hope I can make it through. I’ll let you know how it goes.
This morning I had a 10 miler scheduled and I’m not going to lie, I reeeeeally had to force myself to go. I didn’t sleep that well last night (crazy dreams!) and I have an awful blister on the arch of my right foot. I got it from my long run last weekend and well, I was stupid and did nothing about it so it just got worse. You would think I would have learned by now…but no. So I just kind of limped along and I’ve gotta say, I’m pretty proud of myself for finishing!
I ran a 4 mile loop and then came back to pick up T-Dizzle for the other 6 miles. He was very sad when I first left for the 4 miles..I tried to tell him I would be right back but he didn’t get it and ended up running out the front door and laying down in the hallway so I couldn’t leave him. But once I told him to come back in I was on my way…even though I did feel a little guilty for leaving him.
I made a yummy lunch for myself when I got back. I have come to LOVE lentils so I cooked some up with chopped carrots and onions.
Then I used TE BEST frozen mix from TJ’s. Last time we were there it was the last one! Luckily, James brought his A game on and snatched it up.
I put some lentils, hodgepode and black beans in a bowl topped with some soy sauce.
Now that’s a hodge podge mix right there! Fast and delish.
But I still had to get some carbs in so I broke out a new product that I’ve seen around a bunch and my mom was recently telling me how great it was
For my first piece of Ezekiel I put some peanut butter and some honey I got from the farmer’s market.
Yummm!! Note the delish peanut chunks. Life is good. Now I am going to watch some West Wing.
Have a fab Saturday! Maybe I’ll actually do some errands? Ehh that’s what Sunday’s for…
I was so glad this morning when I didn’t know the temperature before I went for my run. When I got back and turned on the news they said it was 23* outside!! I definitely would have considered going to the apartment gym if I had known that. But instead, I braved the outside and got in a nice morning run….even if my hands were hurting a little from the cold!!
Big News of Today: Obama signed the stimulus package. Unfortunately, the market still plummeted. Obama has said that we will measure it’s success by the lowering of the unemployment rate let’s hope that’s true.
I also heard on NPR today about zombie banks! Which they described as dead banks that are still walking around and trying to eat people. That’s good reporting right there! haha I definitely got a kick out of it! Sometimes you just have to laugh right?
Onto the food!
Making dinner tonight was such a blast! I highly recommend trying to make your own sushi! James and I were even thinking the next time we have people over we could have a sushi making party and just line a bunch of different stuff up for people to make their own rolls.
You really don’t need anything too crazy or fancy to make these either. We didn’t have a sushi making kit or anything.
All that we did have to get for the occasion was seaweed:
For the rice: I just used some brown rice we had gotten in the bulk bin at Whole Foods. It was probably a little more then a cup. First I brought the rice and 2 cups of water to a bowl, turned the heat to LOW and covered it for 15 minutes. Then I came back, stirred it around and kept adding a little bit of water every few minutes until I got the sticky consistency I was looking for. Then I took it off the burner and let it cool for a bit. Later I added about 1/4 c. of rice vinegar and a sprinkle of sesame seeds.
Then I placed a piece of seaweed, shiny side down, on the cutting board and spread the brown rice out with a spatula:
Then…the fun part.
TOPPINGS! We had a spread of some cucumber, carrots, low fat cream cheese, avocado and little shrimpys.
Yummm! Now roll it up.
And chop chop chop chop…..
James completed the experience by breaking out some chop sticks he had found in the kitchen at his work…yesssssss…..
This was delish! And so fun! (Do you like our daffodils that we got at TJ’s this weekend?? Spring come soon!!)
James was in charge of the second roll and got all fancy shamncy. I don’t even know what all went in this. Definitely some Texas Pete!

This morning was a nice long 10 mile run. I was a little worried about it since I was sick last week and didn’t get to run but it went pretty well. I ran down to a nature preserve near here (Hemlock Bluff), ran a few miles on the trails, then ran home. Mentally, it was great to have a destination and know that once I was done, I just had to run home (even if that was 4 miles away!). I like doing stuff like that on runs so it seems shorter.
I also listened to some This American Life podcasts which I LOVE! Seriously, if you’ve never heard these, go to their website and listen to some. They’re stories about people in America. The one I listened to today was from before the inauguration and they interviewed a bunch of different people. Some kids that wrote letters to the prez, people in the military etc. The letters from the little kids made me tear up!
When I got home I promptly showered and refueled!
- 1/2 c. oatmeal
- 2 scoops pumpkin
- some frozen strawberries
- dried cranberries
- unsweetened organic coconut
- TJ’s fiber cereal
So good. A little later I had an apple with PB. I forgot how much I love that combo!
Does anyone know how long is a safe distance to run with a dog? I didn’t take Toby this morning because 10 miles just seems like too much for his little body! The most he’s run with me is probably 6 or 7.
I’m in the process of making a few treats which I will post later 😉

All pretty shocking stories. The guy who owned the peanut factory actually KNEW about the salmonella but kept telling people to ship stuff. I think I heard yesterday that 9 people have died and 400 have gotten sick. So ridiculous that a lot of that could have been prevented.
Onto breakfast. Same thing as yesterday plus some blackberries.
I went a little crazy with the ketchup…I had to scrape some off!
Let’s hope the office isn’t full of valentine’s day candy!!!

I like Easter! Those egg shaped reese’s are amaaaaaing! Perfect chocolate to peanut butter ratio! I hope the salmonella outbreak didn’t effect them!
First off…. Happy 200th Birthday to Prez Lincoln and Darwin! Isn’t it wild they were born on the same day??
I had another wonderful and satisfying lunch today! An old favorite, tuna salad. I try not to eat it very often due to the whole mercury content thing but every once and a while it’s safe… and delicious 🙂
This mix contains: one can of tuna, plain yogurt, cabbage, cucumbers, mustard, pepper, balsamic vinegar.
mmm mmm good! Not very tantalizing in the tupperware but you know how it goes.
When I got home from work today I did 20 minutes of Power Vinyasa #4 from Yoga Download. It was great! I’m definitely liking yoga the more I do it. i still have a hard time with the time spent in childs pose and shivasana. I think I just need to learn to relax, let my mind concentrate on my breathing and be satisfied with that.
I was on my own for dinner tonight since James works until 9 pm tonight. Boo.
And dinner tonight is something, I must admit, I’ve made a few times since I’ve lasted posted about it.: vegan sloppy joes. They’re just so good! I could pretty much eat it every night. But I won’t. Maybe.
I had a side of mixed veggies to round out the meal.
I ate at the coffee table and watched the news while I ate. Not so uplifting.
Time to finish up some laundry and get into bed to read more of my Runner’s World mag. Great way to spend the evening if you ask me!
Morning! Another beautiful day outside today and the temperatures permit me to wear a skirt so I’m taking advantage.
My run this morning was another nice one. I actually wore SHORTS! It’s been a while and boy did it feel good.
I fueled up for my day at the office with some eggs.
It was over easy I guess? I put two eggs in a pan, let it cook then flipped it over. they were delicious!
Off to work!
