So yesterday I tried this little piece of deliciousness:
I gotta say. I was NOT disappointed. My first bite had me thinking “Wow. this actually tastes like a PB&J!” It’s made of dates, peanuts, cherries and salt. Honestly I wouldn’t automatically think cherry though. In my mind it tasted more like the strawberry and PB sandwiches I had as a kid. I really liked the peanuts in this lara! Better then I like some of the other nuts they use (twss).
I really do love these for a snack on the go but they are relatively small for the amount of kcal they pack in. I know it’s all natural (and minimal) ingredients though so what can ya do? They taste great and stave off hunger really well.
Summer Taco Salad
A Mexican salad was on the menu for the night! I love summer!!! Please don’t end!!
- FF refried black beans
- roasted red pepper hummus
This was definitely all mixed together very soon after picture taking. Hummus +refried black beans make a great dressing lemme tell ya.
James got special edition Mud Pie ice cream for dessert but I was so full from this I didn’t even want it! What kind of craziness is that?! Don’t worry..I’ll have some soon enough!
Funny story: My mom used to call me Mud Pie when I was really little because I could definitely be stubborn and get pouty. Like when my mom would tell me my shoes were on the wrong feet (this is in preschool mind you) and I would tell her “I like them like that!!!” I blame it on the red hair.

I need to get some pictures of Toby doing something OTHER then lying around..I swear he’s a very active dog! We get him exercise every day! He just looks so darn cute when he’s all sleepy and smoosh faced. I actually found these pictures on my camera so I’m guessing James and Toby had a photo shoot after I went to work. Can you tell Toby loves the camera?
I went for a 3.5 mile treadmill run yesterday! Woop woop! Longest post-injury run! It started out kind of blah because I hate the treadmill. It’s just so boring! And you aren’t going anywhere! You aren’t thinking “I turn at the next corner look at that car that just passed by what’s that smell aw look at that dog aw look at my dog he’s so precious” All you can do is listen to your music and look at the clock. No good. So I started my running thinking about this but then I decided “No I’m having a good run. Running is a privilege. It’s awesome I can do this” and I turned on some Michael Jackson and rocked out. I was tempted to start doing some air punches and other arm dancing moves but I workout at the gym where I work so I refrained. But in my head, I was totally busting a move. And I kicked my speed up a notch from previous post-injury runs which also made it way more interesting! /end analysis of run.
Okay. I’m going to go read either Eat Pray Love or the new Runner’s World I got in the mail. James is watching some cray cray Fast and the Furious movie that is uber overly dramatic which makes me laugh. Then I tell him it’s just something I read online. Because I’m sneaky.

I grew up piling jif peanut butter onto a piece of bread with a small smear of jelly. Mmmm! I’m thinking this is going to bring back fabulous memories 🙂
Next up during my sweet sweet night was some cookie baking! We have an overflow of bananas right now – we always buy the over ripe ones on sale when we can find em and stuff them in the freezer for smoothies + baking. I’m always looking for new cookie and muffin recipes they are relatively healthy and these banana oatmeal chip cookies from Carrots n’ Cake fit the bill! I whipped these up while James ran out to pick up a chicken sandwich from his fave local pub so when he got home..surprise!
They were good too. I used a crumbled up dark chocolate bar for the chips and also added some raisins. James liked them too!
But really…I wasn’t craving cookies. What’ I was really craving..was ice cream.
Oh yes. That’s the infamous banana softserve. Can you believe that creamy decadent bowl came from 2 bananas being whipped around in a food processor? Okay and some chocolate syrup James put in there when my back was turned.
I did eat dinner somewhere in between there! But nothing special enough for a pic: quinoa + black beans + salsa + hummus. Some of my fave things mixed together.
Another bandwagon I jumped on: twitter! I was so opposed to this at first but it’s actually pretty fun! So feel free to “follow me” as all the kids are saying: @redheadyelowdog. There wasn’t room for it all of it so the second “L” in yellow got the boot.

It’s been a Vegan Dad kind of week!
We’ve made not one but TWO of the awesome recipes from his site.
The first was Channa Saag. Gotta get my moneys worth out of buying garam masala!! Plus I just love Indian food!!
Okay here are the changes. I used less oil, used a can of diced tomatoes plus one fresh tomato diced and used frozen spinach. Most of this was done because ya gotta use what ya got.
All served over quinoa with a dollop of plain yogurt and Mediterranean hummus. This was promptly mixed together post picture 🙂
I have been loving quinoa lately. I made a huge batch at the beginning of the week and have been eating for lunch with leftovers or just with beans and fresh chopped spinach and some balsamic vinegar. So simple and so good.
Next on the list was a recipe I’ve made before, Vegan Dad’s Sloppy Joes.
These were just as delicious this time as they were last time (James liked them even more this time!)
I served mine over veggies. Yum.
Served with a new potato and sweet potato blend. I always keep the skin on the potatoes when I mash em…I like the texture it gives them!
Toby and I went for a run tonight and man was it HOT! The poor dog was laying on the cold tile in our foyer for hours after we got back! Reminds me why I love running in the morning so much. Last summer, I ran every morning in the mountains where the air was light and crisp and I never suffered from the heat. Now that I’m out of the mountains and running in the afternoon (work early + long commute = not ideal for morning runs) it reminds me more of my runs back in Miami – dense, thick, humid air. I’m sure it’s not even half as bad as down there…I’ve forgotten the horrors of 100% humidity and so has my hair.
Toby is now passed out on his own personal pillow. Tired that boy out!!
He’s really just a big baby in case you can’t tell 🙂
Can you believe tomorrow’s Friday?! This week FLEW by! I’m not complaining 🙂 Bring on the weekend!
We had James’ sister and her boyfriend over for dinner the other night for some delish Roasted Vegetable Sandwiches! I didn’t get pictures of our actual feast but I got some pictures of the apps and a cold Quinoa and shrimp salad I made.
I set out some different apps to start off with including Mediterranean Hummus from TJ’s which was awesome – I just love the texture of it! They need to make industrial sized containers.
We also had some olives and peppahs that we got from the olive bar at the grocery store (way cheaper then buying them in jars). The other stuff is pretty easily indentifiable: celery, carrots, cucumbers pickles!
No appetizer spread is complete without hummus and accompanying carbs
I also made a cold shrimp quinoa salad. I have to say, James was VERY skeptical of me making this. He basically thought it was going to taste like crap and even said it wasn’t good when I first made it! But after it was on the table and our guests tried it and loved it he came around 😉
- Sauteed shrimp
- 1 cup dry quinoa, prepared
- 1/2 red onion, chopped
- small zucchini chopped
- small tomato chopped
- balsamic vinegar (maybe 1/8th c.?? Do it to taste)
- juice from 1/2 a lemon
- Mix it all together and set it in the fridge for the flavors to dance around with each other. I mixed everything together while the quinoa was still hot and I think that took away some of the crunch of the zucchini (in a good way!). I would definitely make this again! In fact I’m planning to make some on Sunday to take to lunch with me for the week (maybe minus the shrimpy to cut costs). Can you think of veg protein source that would go well in here?? Maybe some chick peas?

What’s your favorite thing to make for dinner when guests come over? The roasted veggie sandwiches were a HUGE hit! And so easy to put together! Perfect for a summer feast.

Yea. My spot gets stolen on a nightly basis. But who can tell that face to move??
It didn’t take much debate this morning to decide we wanted french toast! I feel like it’s a nice sweet treat without all the time, mess and prep of pancakes or waffles. I used 2 eggs, some almond milk, cinnamon and a squirt of agave.
Then I chopped up a peach and part of an apple and pushed it around in a pan until they were a little heated up.
Top the toast with some PBU, agave and fruit and you’ve got yourself a complete breakfast right there!
I made James a smoothie and took what didn’t fit in the glass. Delish. He likes his smoothies with yogurt in it. Not completely my jam but I like to please the boy.
James’ plate with 4 pieces of french toast, a smoothie and some syrup to top it all off.
Then we laid around and watched some West Wing and I decided to bake some muffins! I used Jenna’s recipe for Banana Blueberry muffins. I reduced the sugar to 1/2 c., used frozen blueberries (what we had) and added half of a frozen banana chopped up (because we didn’t have quite 2 cups of blueberries). YUMMM!
These turned out SO GOOD! Love them. I sent James off to work with 2 of them and then T-dizzle and I went for a run…mind you this is around noon. MAN was it hot!! But I was still happy to be out there 🙂
After I got back and stopped sweating like a beast and took a shower I had a delish salad.
Romained lettuce, green beans, baby carrots, broccoli and red pepper topped with a big ol scoop of refried black beans and the rest of the hummus.
Seriously love refried black beans (fat free– from TJ’s) and it makes a great dressing for a salad when you mix it all up. The beans are a little salty by themselves but mixed with all the vegs it’s perfection.
James is at work late tonight. Boo! Good thing Law & Order:SVU is on. In the mean time, Toby and I are just chillin in bed while I read. I know. Crazy Saturday night!!

So the present I gave myself on my birthday was to run 2.5 miles…the longest I’ve run post injury!!! I also went on a run outside with James..during which I may have yelled “I’M BACK BABY!!”
The other night we also made one of my fave meals of ours: Calzones!
I think pizza is quite possibly my fave food.
We used our usual go to recipe for pizza crust. It’s a Whole Wheat and Honey Pizza Dough recipe that is just delicious!
Mmmm! I cut my half into 4 pieces and took a piece to work with me everyday with a salad. It was such a delicious and filling lunch! It also felt a lot like I was just eating a little pocket sandwich since I could pick it up. Perfection.
James ate all of his in one sitting so everyday he would ask if he could have mine. I was greedy and kept my side all to myself! And definitely pushed them to the back of the fridge, hoping James wouldn’t be able to find it! Bwahhaha
Onions, Marinara Sauce, green peppers, yellow peppers, zucchini, fresh tomatoes, sharp cheddar cheese and tofurkey sundried tomato sausage.
This salad just screams summer to me! The fresh crisp vegetables, the bright colors and the cooling. The cucumbers and tomatoes in this salad were so delicious and fresh. You really can’t beat farmers market vegetables.
Now I’m eating a piece of birthday cake (duh) and enjoying So You Think You Can Dance!! Woot! Okay I mainly just try to watch it because my BFF is obsessed with it.
Kay still on a high from being able to run again! Definitely stretching a ton though and still doing my hip exercises though. No more injuries!!

What a fab birthday I had despite it being on a Monday and having to work (aka open returned mail for 8 hours)!
I have to say..the big highlights were spending it with James, and the food.
There’s a hole in the wall Mediterranean place near where we live that I LOOOOVE! We went there for James’ bday and now it was my turn. Mmmm falafel wrap…
The only thing I was bummed about was that this one had no hummus on it!! Good thing I had my own to smear all over it. I love falafel!
Weird fact: James is allergic to falafel but not to chick peas or hummus. Why?? Who knows. More falafel for me!
I arrived home to a lovely clean apartment and full of decorations!! I was sad that James had to work late but this (almost) totally made up for it!! I definitely had a huge smile on my face.
Then there was more take out to be had in the form of SUSHI!!! I heart sushi.
I started off with some Happy Birthday miso soup (consumed while waiting for James to come home so I wouldn’t start eating my hand)
Then there was a true feast!! Summer rolls (for me) spring rolls (for James)….

Yummm!! And I was soo full after that. But not too full for birthday cake!!
This would be a chocolate vita brownie (using the mix) with TJ’s mini peanut butter cups mixed in and slow churned Edy’s Mint Chocolate Chip Ice Cream and Edy’s Slow Churned Vanilla Bean ice cream.
Um. Delicious. Obviously.
And with a full and happy belly, I went to bed. Being 23 isn’t so bad after all 🙂

James and I have a new obsession
Iced Venti Nonfat Latte. With some agave squirted in. Mmmm.. it kind of reminds me of chocolate milk. James was given a bunch of starbucks gift cards and let me tell you…we have been putting them to good use.
James ordered this one. Before we got up to the speaker (we were in the drive-thru) he asked me again what we were getting. I told him. The spotlight is on him and what does he order? “umm yea can I get a Venti Grande light?” He then turns toward me with a face saying “I did good, right?” I was crying I was laughing so hard! And of course immediately texted my sister since she used to be a barista at starbucks. Oh the hilarity!
I saw a recipe in the latest eating well for Eggplant Pomodoro Pasta and knew that would be the perfect way to use up the pretty lady eggplant we had gotten at the farmers market. I cut the eggplant into bigger chunks to keep the meaty texture. I also put some zucchini, carrots and green pepper. While that was all simmering in the pan I put some parsley, red pepper, capers, red wine vinegar and about a half a cup of marinara to lightly coat all the veggies and bring the dish together.
The tortellini was from Trader Joe’s. It was just kind of meh. I couldn’t really taste the cheesey interior. But I guess you can’t expect too much from dried tortellini in a bag, huh?
At least the veggies turned out well! This is James’ plate. Mine was mainly a mound of veggies with a few tortellini sprinkled on it.
Tomorrow’s my birthday! woot woot!
I have lots more pictures of meals to show you. We’ve had some family stuff going on this week so I haven’t felt much like posting but I am going to put some posts together today because we’ve been eatin some good stuff 😉 Have a fab Sunday!!
Hope everyone had a fantastic fourth of July! James had the day off of work which was awesome so we made our way over to the farmers market to support the local farmers and get some fresh produce.

PEACHES! I resisted getting some this week…they are so. good….Juice dripping down your chin and you don’t even care good.
Plus so many gorgeous plants here too. And check out that Carolina blue sky we got to enjoy.
I had to get some sunflowers while we were there. They were too cheerful to pass up.
Then we moseyed on over to the section of the market with the bakers and their free samples 😉
James was completely enamored as he heard the description of this German pastry. We knew we had to give one a try! The baker had already gone through 3 trays of them! And that’s before 11 AM!
Just looking at it..you don’t really need any words. But I’ll give you some anyway just in case your mouth isn’t watering quite enough yet.
For 4 dollars you can get this little slice of heaven. This pastry was so light and flaky with the perfect variation in textures and flavors that make you want to savor every bite and morsel. The vanilla cream filling was airy and not overly sweet. The toasted almond topping were a wonderful crisp contrast to the soft frosting and pastry.
James was in heaven while he ate this! And I have to say, I was so pleasantly surprised to find that this wasn’t overly sweet in the least! It was a truly delicious treat. Thank you Annelore! If you live in the triangle, seek these out at the farmers market!

- HUGE cantaloupe!
- I was so pumped we got the cantaloupe! James always says he doesn’t like any kind of melon but he tasted of sample of this and said “I can eat this”. Into the bag it went!
Our fantastic day continued when we decided to go see Public Enemies (I love Johnny Depp!). James had a free ticket to the theater so we decided to take advantage. I liked it! I’m not a big fan of movies with guns generally but I thought they did a good job of not making the shoot-em-up scenes overly gory. Plus I like that period, with the men in long trench coats, robbing banks, protecting women and evading the law. It’s exciting!
Dinner. Snow crab claws. I was thinking about these all through the movie!
These were on super duper sale at Harris Teeter ($3.77/lb!!! we saved $16 on the 2.5 lbs we bought!) and I was PUMPED to get it!! Since moving out of Miami, I just crave seafood and crab is a definitely a favorite treat of mine.
Before din we snacked on some green veggies (green peppers, broccoli and cucumber) with some black bean dip (refried black beans with tomato and yellow pepper mixed in). James requested cocktail sauce but he quickly realized you don’t need cocktail sauce with crab…the flavor is too delicious to cover up!
With some three buck chuck on the side. Mmm mmm good!
Holy cow these were SO GOOD! We call them Trifecta Potatoes because they have 3 different kinds of potatoes in them: sweet potato, red potato and white potato. Oh man so delicious. I love mashed potatoes and the combo of those three potatoes was perfection. The little bit of real butter helped too. Don’t be afraid of butter people! A little bit can go a long way.
Delicioso corn on the cob. Corn on the cob just screams summer to me.
This crab was freakin delicious. No butter necessary, it tasted buttery all on it’s own. I was pretty much in heaven as I was eating this. We still have one cluster left that we’re having with dinner tonight! Yesss…
Then I laid around reading my book until the fireworks started. I climbed into our window for a better view.
Haha! I didn’t even know James was taking a picture of me like this. I’m sure all of my neighbors thought I was a creeper.
We went and set off some bottle rockets of our own and Toby went NUTS! He was chasing them every which way! I think they reminded him of the laser pointer.
Phewwww! What a long post!! I have more stuff to show you but that will have to wait 🙂 Until later!
Also – I’m watching that show “Kitchen Nightmares” on hulu right now. Kind of terrifying to see what you might be eating at a restaurant. Very glad that 1. I don’t eat meat and 2. We usually eat at home. Ew.
Hello all! Today has been a nice one thus far over in NC. I actually have the windows open and am enjoying the nice fresh air!
Let’s rewind to yesterday, though, shall we?
Yesterday morning started off with something I haven’t had in far too long: Oat bran! There’s just something very deeply satisfying about hot cereal.
In the bowl was 1/4 c. oat bran (that exploded in the microwave when I wasn’t paying attention while making my egg…so who knows how much oat bran was left), 3/4 c. water, 1 tsp of nutritional yeast, salt & pepper + one egg over easy. I obviously smothered this in Texas Pete post picture.
My egg flipping technique needs some work but the yoke was perfectly runny.
Then Toby and I went for an hour long walk in my striped keds…PSA: striped keds are not walking shoes and will give you blisters.
When I got back I got to work on some more of my protein muffins, per James’ request.
James has the habit of saying to me, when I make something he likes, that he wants it again “JUST LIKE THIS!” translation: don’t do anything crazy or try to change them. Well boo you, James! I’m baking and I’m going to switch it up!
Okay so I didn’t switch it up that much. I did use pumpkin instead of apple sauce because that’s what we had and then i put some peanut butter on the top before I put them in the oven. It made a little bit of a peanut butter frosting! I am totally doing this again!
I calculated the nutritionals for these and they each had 127 calories, 3.5 g fiber, 4.6 g protein, 3.2 g fat. and 2.2 g sugar. I’m not sure exactly how accurate this is because the website didn’t have the trail mix I used (Planter’s nuts and seeds) and I just kind of guesstimated how much mix ins I used.
Any how, they’re full of delicious wholesome ingredients and I’m happy sending James to work with these rather then having him pick up a snack of french fries and hush puppies from the Q-Shack.
I didn’t really feel like making dinner last night. Could the mountain of fruit and peanut butter I had consumed during the afternoon be the culprit? All signs point to yes. So we just went and played frisbee with Toby then came home and looked at apartments online we might want to move to while snacking on bean+hummus+veggie wraps. Hit the spot.
So every night when James gets home from work around 7:45/8 we go to this church nearby and throw the frisbee for Toby. There’s this huge field over there and there’s usually a soccer game going on. Well the other night these two little boys, whose dad was playing soccer, came and hung out with us last night and we let them throw the frisbee for toby too. Last night when we went, holy god. Like 12 little kids come swarming toward us the second we got out of the car! It was crazy. All the little girls would start screeeeaaamminnggg when Toby would be running back toward us with the frisbee. I will definitely need to take pictures/video next time!!
