One awesome thing about food blogs is obviously all the great recipes you come across. My cookbook is slowly getting filled with recipes I find on here.

Today I decided to make some granola that I saw on Kath’s blog that she had modified from Suite Apple Pie’s blog. And now here’s a slightly different version!

Blogland Granola

  • 2 c. oats
  • 1/2 c. unsweetened coconut
  • 2 T. honey
  • 2 T. canola oil
  • 1 T. Chunky Peanut butter (I used TJ’s)

Preheat oven to 300*. Heat honey in micro for about 30 seconds. Pour in a large mixing bowl along with canola oil and peanut butter. Add the rest of the ingredients and mix well. Spread mixture onto well greased cookie sheet. Bake for 15 minutes. Remove and stir. Then bake for another 5 minutes. Remove and Stir. Then bake for another 3 minutes (or until golden brown). 

Yum! I really liked it. The peanut butter flavor was not very strong though so feel free to add more.

I might experiment next time and see if I can leave out the canola oil and add another tablespoon of peanut butter. The oil from the peanut butter plus the honey may be enough to still give it some crunch.

I definitely enjoy homemade granola more then store bought granola.
